The vineyards and production process at V’Asbos are a meticulous, boutique journey of craftsmanship-respectful of nature and human effort-designed to carry the unique terroir of Assos into every bottle. Each grape and every blend is handled with care to express the region’s character and distinctive aromas.

Vineyard & Terruar

V’Asbos Vineyards are a boutique wine estate located on the hills of Assos, facing the Temple of Athena, offering an ideal microclimate shaped by sunny days and cool nights. Across 6 hectares of organic vineyards, red varieties including Grenache, Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec, and Syrah are cultivated with individual care given to each vine. The vineyards are treated like a garden; instead of mass harvesting, grapes are picked only as needed, allowing each variety to retain its natural character.

Once harvested, the same level of precision continues in the winery. Thanks to a gravity-flow winery, liquids are handled without pumping, and gentle, temperature-controlled cold fermentations with native yeasts are applied. The wines are aged in terracotta and clay amphorae, glass globes, or selected oak barrels; Grenache and lighter wines preserve their aromas without contact with wood. Each year, production remains limited to micro-cuvée scale, with vintage blending used to balance the character of different years. This process reveals the uniqueness of the Assos terroir in its purest form.

Volcanic Soils

The vines are rooted in rocky, mineral-rich volcanic soils. This structure forms the backbone of our wines, contributing tension, structure, and mineral depth.

The Etesian Winds

The region experiences wind for nearly 250 days a year. These steady northern winds cool the vines during the hot season, ensuring slow and balanced ripening. At the same time, they naturally reduce humidity and disease pressure, minimizing the need for intervention.

Garrigue Influence

Wild thyme, rosemary, and native Mediterranean herbs surround the vineyards. This natural vegetation - known in French as garrigue - subtly influences the aromatic profile of the grapes, adding herbal and spicy nuances.

Southern France Parallel

Our Head Oenologist, Xavier Vignon, recognizes strong similarities between Assos and Southern France, particularly the Rhône Valley — in terms of warmth, wind patterns, and maritime influence. Yet Assos expresses its own distinct identity through its raw Aegean character.

Vineyard Management & Harvest

Vineyard Management & Harvest

Vineyard management is led by Agricultural Engineer Kaan, supported by an experienced agronomy team and local women workers who play an essential role in daily vineyard care. Each parcel and cluster is monitored individually. Our objective is never maximum yield, but optimal balance.Harvest takes place at dawn, before heat and oxidation begin to affect the fruit. Grapes are brought to processing by late morning, preserving freshness and aromatic integrity.

Each vine, each cluster, each decision is made with one goal: to express the true character of Assos with clarity and balance.

Quality is not created in the cellar. It begins in the vineyard.
