The winery is designed not merely as a production facility, but as an experiential destination that brings together Assos’s history and natural beauty with contemporary craftsmanship-where wine, gastronomy, and cultural discovery converge.

The winery is a center where the historical texture and natural beauty of Assos meet contemporary craftsmanship. Facing the Temple of Athena and surrounded by volcanic soils and garrigue vegetation, its design is fully integrated with the terroir and the landscape.

The gravity-flow winery, precise temperature-controlled cold fermentation, and the use of clay and terracotta amphorae, glass globes, and selected oak barrels preserve the wine’s natural aromas and balanced character. Lighter wines such as Grenache retain their delicate aromatics without any contact with wood.

The estate also functions as an experiential and gastronomic destination. Tasting areas and restaurant spaces offer guests a holistic journey, allowing them to experience the cultural and natural heritage of Assos through wine and food.

The estate rises at the highest point of the ancient city of Assos, directly opposite the Temple of Athena.

Surrounded by garrigue vegetation and volcanic rock, the winery draws from its landscape, contributing to the wines’ distinctive mineral backbone. Designed by an Aga Khan Award–winning architect, the winery reflects a boutique-scale approach rooted in respect for the land and its surroundings. Modern and refined, the structure is elegantly embedded into the terrain, offering an aesthetic that harmonizes with the natural beauty around it.

V’Asbos aims to create wines that are a true “bottled essence of the vineyard” by combining modern technology with traditional methods.

Thanks to the gravity-flow winery, liquids are handled without harsh pumping; this gentle approach prevents unwanted oxidation and preserves the wine’s natural character.

Fermentation is carried out using Assos’s native yeasts through precise, temperature-controlled cold methods, allowing the wine to express its fruit character and terroir in the purest form.

The experience begins with a technical introduction to the winery. From grape reception to gravity-flow processing and amphora aging, each step of production is explained in detail.

A standard tasting includes five different wines, typically selected from the Expression series and their various editions.

The focus is not simply on drinking, but on understanding - learning about structure, balance, and the decisions that shape each wine. Tasting mats and technical information sheets support the experience, guided by members of the production team.
