About

V’Asbos Vineyards was founded in 2012 by three partners brought together by a shared passion for wine, a deep love for Assos, and a strong belief in the region’s potential as a world-class wine terroir.

V'Asbos Bağları, şarap tutkusu, Assos’a olan derin sevgisi ve bölgenin birinci sınıf bir şarap teruar olma potansiyeline olan güçlü inançlarıyla bir araya gelen üç ortak tarafından 2012 yılında kuruldu. V'Asbos Bağları'nda, mikro-kuve şaraplarımızı özenle üretiyoruz ve bu süreç, bağda başlıyor. Organik sertifikalı bağlarımız, bugün 6 hektarlık alanda, Grenache, Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec ve Syrah gibi kırmızı çeşitlerin seçkin bir koleksiyonuna ev sahipliği yapıyor.

Each V’Asbos wine is born from Assos’s volcanic soils, sea breezes, and the herbal scents of the Mediterranean. Recognized for the balanced touch of garrigue aromas-thyme, rosemary, and lavender-these wines are creations that remain faithful to the essence of nature, shaped by the human hand only as much as necessary.

Assos Terroir

The Assos terroir benefits from the Mediterranean climate of the Northern Aegean, tempered by abundant sunshine and cooling coastal breezes.

Our mid-elevation vineyards create a perfect balance between warm days and cool nights. This natural rhythm allows the grapes to absorb the sun throughout the day, while the cooler evenings help preserve their freshness and vitality.

The volcanic soils give our wines a distinct mineral backbone, adding length and structure while supporting the ripe grapes’ expressive fruit character. Finally, the signature “garrigue” notes of our wines emerge on the finish.

These complex flavors evoke the scents of dry herbs and aromatic shrubs typical of Mediterranean vegetation, released into the air as the soil cools at sunset.

Our Growing Philosophy

We see our vineyard not as a conventional vineyard, but as a garden at V’Asbos.

The small scale of our vineyard allows us to care for each vine with the attention and precision of a garden. For example, our Grenache vines trained in the gobelet style are cultivated differently from those grown on stakes.

We apply the same level of specificity to our Syrah and Cabernet Franc vines. This individualized approach enables us to respect the unique needs of each variety, something that conventional vineyard management rarely allows.

Our Art of Winemaking

At V’Asbos Vineyards, every decision from vineyard to bottle is guided by our commitment to crafting pure, balanced wines-true expressions of Assos.

After growing exceptional grapes, our mission is to approach them with respectful winemaking techniques—ensuring the wine becomes a bottled expression of the vineyard itself, rather than an overworked product.

Our purpose-built gravity-flow winery avoids harsh pumping of liquids, preventing unwanted oxidation that could permanently alter the wine’s character. We employ gentle, temperature-controlled cold fermentations, allowing native yeasts-guided by the air of Assos-to work naturally.

Most of our wines are aged for extended periods in terracotta or clay amphorae, which provide slow micro-oxygenation and preserve purity and balance.

Wine remains the priority - even in the design of the restaurant at V'Asbos.

The cellar operates within a carefully maintained thermal balance. For this reason, during warmer months, curtains remain closed to prevent excess heat from affecting the space below. The restaurant respects the living nature of the wines beneath it.

As temperatures drop and the evening cools, the curtains are opened, revealing the cellar view once again. This rhythm reflects the estate’s philosophy: every decision - architectural or operational - serves the wine first.
